Hemingway described them well when he wrote of the oysters' 'strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture'. There's one place in Ireland that appreciates the taste of the oyster more so than anywhere else - Galway.
